梅干菜 Mei-gan-tsai (Dried pickled mustard)

It is a variation of Hakka pickled leaf mustard, too. Half finished leaf mustard pickle is dried by wind and sunlight until completely dried then tied up bundles for a long period storage. Mei-gan-tsai is a good cuisine ingredient to stew with meat. Mei-gan Overturned Pork 梅干扣肉 is a famous Hakka dish. It can also be steamed to make Mei-gan meat ball or cake. It gives rich and deep taste to either soup or stir-fry.
